Presidents Weekend 2008 - "Bush's Beans" Dip

¼ cup chopped onion
1 Tbsp chopped fresh parsley
1 tsp chopped fresh or ¼ tsp dried thyme
1/8 tsp salt
¼ tsp freshly ground black pepper
1 15oz can navy beans (such as "Bush's")
1 clove garlic chopped
½ cup (2 oz) crumbled blue cheese
3 bacon slices, cooked and crumbled

1. Place first 7 ingredients in blender or food processor and process until smooth.
2. Combine bean mixture and remaining two ingredients in a small bowl.
3. Yield is about 1-½ cups.

Serve with crackers, warm pita wedges or toasted baguette slices.
